Straits Chinese cuisine is a combination of Chinese ingredients cooked with Malay herbs and spices. Unlike Indian curries that utilise mainly dried chillies and spices, the mainstay of Straits Chinese cooking is the use of fresh chillies, shallots and garlic as well as various types of ginger roots. The aromatic leaves used include kaffir lime, turmeric and polygonum (laksa leaf) which lend a distinctive taste.

Other typical flavouring ingredients including candlenut, tamarind, lemongrass, galangal, cinnamon, cumin, star anise and of course, coconut milk and palm sugar.

One of the most delicious curries is Lemak Nenas Prawn with seafood cooked with pineapple slices in a laksa gravy. Asam Prawn refers to prawn cooked with tamarind and palm sugar with a smoky flavour. Whether it is seafood or meat, Straits Chinese cooking offers another dimension of sophisticated taste.

The Straits Chinese or Baba Nyonya community is also famous for their desserts utilising coconut cream, palm sugar, screwpine leaves and Butterfly Pea Flower for a natural blue colouring. Typical examples include Sago Gula Melaka and Bubur Cha-Cha. And for the adventurous, Baba Nyonya desserts include durian, the “King of Fruits”.
